What should I serve with this?

I'm having friends over for dinner tomorrow night, so total 3 adults and 4 kids (5,4,3,3). I have a tray of cheese enchiladas and was going to make Spanish rice and brownies for dessert. Should I do a vegetable (thinking corn) or maybe some corn bread? Something else?

As an aside, the enchiladas that I made are in a 9x13 serving dish and were frozen. I moved them to the fridge today (needed the room) so anticipate that they will be at least half defrosted by dinner time tomorrow night. What temperature and for how long do you think that I should cook them?

  • I'm making Enchiladas with rice for the kids and my Mom tonight (DH and I are going on a date) and they are frozen. Usually I do corn with them.

    Mine that I just put in the oven are completely frozen. I put them in at 375 for 1 hour and 15 minutes.

  • Corn would be good, you could add a chili powder and butter to it.

     I would probably mix 1 can corn, 1 can black beans, 1 red pepper diced small, 1 red bell pepper, 1 avocado, the juice of 1 lime and salt and pepper. It will give you a little extra protein, great flavor and veggie.

  • Either avocado salad (like chunky guac, basically) or a corn/tomato/avocado salad - Paula Deen has an awesome one.  Check foodnetwork.com for it!
  • this is a really good side salad.  I substituted brown rice for the crab because I don't like seafood and it was yummy.
