Any recipes for delicious and easy dinners to make for a couple coming to dinner this weekend? I love making Barefoot Contessa's lasagna but the guy coming is Italian, so I'd rather not make something so Italian:)

Chicken Marbella served with crusty bread and wilted spinach salad with warm-feta dressing
Both are delicious and super-easy to make. The Chicken marbella is so easy, you can make it ahead to marinate, and just pop it in the oven an hour before you're ready to eat. Salad can be nearly made ahead, too - just some last minute touches and you have a gourmet meal
Note: be sure to cut down the marbella recipe - it's for a large quantity (I usually halve it).

I usually get lots of compliments on a spinach/shrimp linguini. Its super easy and you can adjust to make it for just two people or 10 people. I usually service with a salad and some nice bread with an olive oil dip.
- Cook linguini. When its about 1/2 done, add frozen, chopped spinach to the water.
- while cooking, thaw some frozen, pre-cooked, shrimp (with the tails already off). I usually get the small ones because those are usually the ones with the tails already off. I've also made it with fresh shrimp but i didn't taste much of a difference for all the extra work.
- Saute a ton of fresh garlic in olive oil, and add the shrimp to it. I also cook up some turkey bacon or regular bacon and break it into pieces. I add this to the shrimp/garlic.
- Once the pasta/spinach is done, drain and add it to the skillet with shrimp and garlic and add some more olive oil. Toss it just enough to coat it and then i put it in a dish and sprinkle it with grated parm. cheese.
