I know we always post about needing ideas for lunches for our kids but now I'm in a lunch rut for myself. My husband and I are really trying to be more budget conscious and bring our lunches to work instead of going out everyday but I have no ideas on what to bring. We've done salads with grilled chicken on top and they were great but I can't do them everyday, I need variety. I've also done lean cuisines and they don't fill either of us up. Anyone have any great healthy lunch ideas that you love that you can share? TIA!

I assume you have a microwave since you mentioned lean cuisines?
I make soups, stews, chili, etc and freeze them into containers and thaw in fridge the night before, or take frozen. We also get creative with sandwiches/wraps/pitas and the contents.
Occasionally we make our own lunchables with crackers, cut cheese and cut up garlic sausage, not as healthy as soups but better then the processed lunchables!
You can also make tortilla pizzas. These are fantastic! We would take a tortilla or 2 and then in separate containers bring cut grilled chicken, mozza cheese, peppers, pesto, etc. (basically what you want on it) and then at lunch you dump it onto the tortilla and microwave to melt. yum! I have other topping ideas too if you want let me know.

A couple favorites of mine, tasty, not a boring green salad or cold cut sandwich, and you can make a bunch and keep chilled to use here and there through the week:
Tortellini Salad
Cooked/chilled cheese tortellini (I use the tortellini you buy in the refrigerated section of the grocery store) tossed with sliced bell peppers (red, green, yellow, whatever), plum tomatoes, artichoke hearts and a handful of arugula or another favorite green. Toss with any light vinegarette, chill, take.
Energy Salad (named by my dh, whatever, lol)
Cooked white or brown rice, can of drained kidney beans and/or chick peas, drained can of corn, diced tomatoes, diced cucumber and pretty much any other diced veg you like. Toss with a vinegarette, chill. Pack some in a tupperware container and pack whole wheat pits. Stuff pitas with energy salad at lunch time and enjoy. (Don't stuff and then pack, pitas get soggy)
