  • I usually make meatballs with meat + seasonings only. If I add anything watery (like finely chopped onion, drained spinach, grated carrot...) then I throw in some rolled oats to help hold them together. Same for meatloaf.

  • For a party or snacky appetizer for the holidays I always mix 1/2lb of lean beef 1/2lb sausage, some rolled oats and bake. set in crock pot on warm with cranberrySauce (the can..I can't think of it..That's also the reciepe on the back of the Oceans Spray Cranberry Sauce)
  • I've been making these for a while now. I don't eat meat but I make them for DH and he swears by them and asks me every week to make a big batch.

    You can use turkey ground meat or beef.. I tend to stick to turkey 

    (also, i usually eye ball the ingredients so you can add more/less of what ever you desire).

    1 lb ground turkey meat (or beef)
    1/4 Cup ketchup
    1/2 Cup of panko bread crumbs (or any bread crumbs, but panko is SF)
    2 - 3 Tbsp minced onion
    Salt
    Pepper
    +1/2 Cup panko bread crumbs for coating (optional)

    Roll into small balls and coat each one in the bread crumbs (this is totally optional and it depends on how much time i have if i do this or not)

    Bake for 10 mins and then roll them over on the other side for additional 10 m.

    Take a small deep pan and fill it will tomato sauce (room temp or hot) and dunk all the meat balls in it and bake for another 10 mins 

    **I noticed my DH likes the meatballs small.. but obviously make and adjust the time you bake on the size of the balls.

    **use more panko bread crumbs if meatballs are not sticking. Turkey meat is much more watery so it needs more breadcrumbs to stick (especially without egg).. but ground beef should be enough (or less)
