We're flying with both kids in their car seats, so we have to lug those on board. In addition, I was thinking about bringing 1 smaller bag with toys to stash underneath the seat. We also need our diaper bag (or a bag to carry our diaper bag stuff) and our DSLR with flash and an additional lens. Should I just dump our diaper bag and camera in a larger duffel and stash that overhead, or will it be really annoying to get to the diaper bag items midflight. (the flight is 3 hours, so unless they poop/vomit, I'm thinking we really won't need to get anything from there).
DH and I are each wearing a kid, so we we'll have both hands free...although I"m a weakling, so I usually need both hands to carry a car seat hahaha.

Get a set (or two) of GoGoKidz wheels to attach to your car seat. Then you can wear your child, wheel the car seat through the airport and throw your bag(s) in the car seat. Your shoulders will thank you.
I think your diaper bag can easily go in the overhead, unless that's the bag where your snacks are, too. You should be fine for a 3-hour flight. I did a 12-hour flight with DD in March and stuffed multiple bags into one big hiking-type back pack and then redistributed everything in it once we got on the plane. I would really only do that for a long flight.

Do you have a large backpack? I think that will be a lot easier to carry though the airport than any sort of duffel or diaper bag that goes over your shoulder or that you need a hand to carry.
I think storing a bag overhead is fine. Just keep snacks, drinks and toys under the seat.
