We just found out our son (14 months) has a severe egg and PB allergy. He now has an Epi-pen, mainly for the PB allergy, as the egg reactions (all as secondary ingredients in other foods) have been ezcema related. I've chosen to send all food items for my son (breakfast, lunch & snack) to his home daycare and am in need of new ideas!
In the past I've sent leftovers from dinner (not usally his favorite) or a grilled cheese with fruit. He's not very good about eating veggies at this time (unless I mix them into something else) and doesn't like typical things most kids love (mac n cheese, mashed potatos, chicken nuggets). Does anyone have any suggestions??

Here are some simple and easy things....
* Tyson "dynasore" chicken nuggets
* IANS fish sticks / chicken nuggets / Alphabet fries
* Pasta with red sauce
* Home made waffles (my favorite.. i make the waffles in batches and freeze them)
* Pancake sandwiches (something like this and you can use sunbutter)
* Rice Krispy treats (easy to make the home made ones..)

Few of my recipes..
Rice balls - I use almond butter but you can use sunbutter. This was my son's lunch from about 14 months to 18 months every day.
crapes
Chex sandwiches - this was another hit with my son. he still eats them for lunch from time to time.
Blueberry muffins - so easy and quick to make =great for a snack.
our son loves rice cakes with sunbutter
chicken sausage is another favorite (it comes in lots of flavors).
safe lunch meat rolled up in a tortilla with avacado spread
waffles and pancakes are always a big hit
cereal bars are easy
Can you get a copy of the daycare menu? I've found it much easier to follow their menu (sending safe versions of the entree) than to come up with it all on my own. I have the menu hanging on our refrigerator so that I know exactly what to pack for him that day and what to shop for.
My son has peanut and egg as well. He has tested positive to MANY other allergens but we have been able to handle those in his diet.
For the egg allergy - have you seen the egg substitute stuff they have out there? It's OK... I have found it easier to sub other foods. Like when making brownies or a cake - sub applesauce for the eggs. I buy the pancake mix that doesn't contain eggs and it's pretty good.
For school lunches... great ideas above... also think about meatballs (eggless or make them yourself and just use bread crumbs as the binder), pasta that's easy to pick up, I second sunbutter as the above poster - we use that often and it's tasty. You could put sunbutter and bananas in a rollup. hmmm what else... you could cut up little pieces of meat (deli would work too), and cheese.
