Our cabinets look like the top left of this pic....medium oak - standard builder, grade, I assume.
I'd like to paint them soon (which means 1-2 yrs at our rate).. but I worry with the Oak woodgrain it may not look great. Is this something I should just forget and add new cabinets to the list of project?
I am ignorant when it comes to wood/refinishing furniture.

There have been lots of post about this on decorating and renovating. A bunch of ladies have use the Rustoleum cabinet stuff, and the difference has been amazing. I would ask over there.

My cabinets that I painted in my laundry room were oak and didn't look as nice as those in your pic. The oak grain was really loud. I painted them and they look great. A good primer, quality paint, sanding a little and a foam roller and brush make all the difference.
