We're planning to mostly use prefolds and covers for the newborn period but I often see people rave about using fitteds, wool covers and wool pants, etc. Can someone school me on why I might wanna try these out and what the benefits are? They certainly are cute but also much more expensive than the prefolds/covers option...

You can use wool with prefolds as well.
Some people prefer not having to fold or Snappi prefolds, and want something that looks more like a traditional diaper. And fitteds come in adorable prints.
Wool is a natural, breathable fiber that stays cool in the summer and warm in the winter. The covers are also stretchy, so you can conceivably use them over a variety of size ranges. They are not necessarily that expensive. You can make them from old sweaters or knit them up if you're so inclined. And you have options like soakers, shorties, footies, or longies to work with as well.

DD is 3 months, STTN, and the fitted with hemp insert keeps her and her sheets dry. Our prefolds didn't do the job for nighttime. We actually didn't spring for the wool--just use the existing covers to keep costs down (although I plan to invest in wool here pretty soon). If you're only using them for nighttime, you only need a few fitteds.
Also, having a fitted is a GREAT thing to keep in a diaper bag for on the go, or when you leave LO with a family member. The grandparents can't figure out the snappi system (including MIL who used diaper pins on her kids), but fitteds with snaps or velcro, they can do.
