can you mix more than a few oz at a time? meaning can I do a whole pitcher and does the ratio stay the same of one scoop per 2oz of water?

I wouldn't see why not--- it's the same volume.  You just have to keep in fridge and consume within 24 hrs. 

What we do is keep it all on the counter along with room temp nursery water and make bottles as needed.  What I've even done is taken one of those formula dispenser thingys you can travel with and pre-measured the powder in there and then put some pre-measured water in bottles and then just mix together when ready.  That way there's nothing to warm up.

I do the same as the PP.  I go ahead and measure out the water in the bottles and then all I have to do is scopp out the powder as needed and when I travel I measure out the scoops in the container and take the bottles with just water along.  So much easier for me and I do not have to worry about using the already mixed formula within a time frame or warking it up from storing it in the fridge.
