Weekly menus?

I didn't miss this post did I?

Monday: Kielbasa, pierogies, peas

Tuesday: Spinach & feta stuffed chicken, brown rice, yellow squash

Wednesday: Just me & DD, maybe some pasta and veggies.

Thursday: Naan pizzas (zucchini, garlic, mozz), salad

Friday: DH leaves for 1000 Islands for the weekend, I think DD & I are going to my parents for dinner.

Saturday: My BFFs Mom's surprise 60th b-day....pizza, wings, etc.

Sunday: Dinner will depend on if DH is going to be home in time or not

  • Oh I actually have meals this week:

    Last night we had: chicken taco soup

    This week we are having:

    1 - Fish (haven't decided salmon or tilapia) w/ sweet potatoes and breaded zucchini stick that I saw on skinnytaste.com

    2 - Pasta and homemade sauce, as soon as I thaw some ground beef

    3 - Cheesy chicken, broccoli and rice casserole

    4 - Baked turkey croquettes (also skinnytaste) w/ mashed potatoes and probably green beans or peas and corn.

  • Sunday we had Montreal marinated London Broil on the grill, baked potato, corn on the cob.

    Monday we had Homemade Pesto over spaghetti with sauteed zucchini, yellow squash, and tomatoes.

    Tuesday: We are going to the Maroon 5 concert at SPAC, probably eat at PJ's BBQ before that.

    Wed: Takeout or out to eat because we leave Thurs for vacation!

    Th/Fri/Sat/Sun: On vacation!!!

    M: grilled chicken in a honey-lemon marinade and grilled summer squash

    T: going to my parents for dinner

    W: DH is going to the baseball game, and Evan and I have late lunch plans w/ friends... so we'll have a light dinner... leftovers or maybe some eggs.

    Th: chicken lettuce wraps and veggie "fried" (brown)rice

    F: something easy, because I'll be packing and baking cupcakes for Saturday. Maybe I'll make a pan of enchiladas in the morning and throw them in the oven?

    Sat: In Binghamton for DH's family picnic, so whatever they serve there.

    Sun: the simplest tomato sauce (I'm really excited to try this, I've heard it's awesome!) over fresh pasta and salads

  • M- chicken tacos and corn on the cob

    T- shrimp bake and cole slaw

    W- spaghetti with turkey meatballs

    T- at my parents'

    F- white chili and cornbread

    S- flank steak with peppers, onions and corn

    S- pork chops with whatever CSA veggies we get this week
