I just started using 1 T ground flaxseed + 3 T water for each egg. Let it sit for 10 minutes and then you can bake! So far I have used recipes for 1, 2 and 3 eggs. The three egg recipe it had a good taste but the cake fell apart. I have also used ener-g egg replacer. Any other ideas? Thanks

If you need to only substitute one egg in a baked good recipe a mashed banana works or 1/4 cup of applesauce, but make sure the recipe has baking powder or soda to make sure it rises.
1/4 cup of silken tofu for an egg is good too.
Honestly, if recipe calls for more than 2 eggs, i avoid -it's almost impossible to substitute three or more eggs (IMO).
If you can have soy, than try tofu (i've seen it in many recipes, but we avoid soy so we don't use it).

Challenged Soy and tolerated it.
