I used a steam pressure canner for the first time today. I think my green beans turned out fine, but I noticed that the beans inside of the pods turned a little brown during processing. Is that normal? Are they overcooked?
I followed the Ball book instructions and did 25 minutes at 10 psi.
Also, I noticed that it looks like the water level is low in one of the cans - below the level of the beans. Even though it is sealed, should I throw that can in the fridge and use it first or is it OK that way outside of the fridge?
Ugh. I love using my water bath, but this steam stuff is intimidating!!

Did you cold pack or hot pack?
My guess is the brown is completely normal. I'd definitely use the jar with low fluid ASAP.
