I've only had time for sandwiches or smoothies loaded with fruit, milk, protein, and peanut butter. So not much help, but I'd love some wheat noodles, stir fry veggies and shrimp :-)

I've been getting creative with salads. I put whatever fruit is in season in it with chicken, nuts, cheese. And I use spinach instead of lettuce since it has more nutrients.
