NBR: Eggplant Parm

I finally WANT to eat something that doesn't make meant to gag...Eggplant parm. So I'm all excited to eat real food, go to the grocery store and get everything to make it while avoiding eye contact with every other food in the store. I forgot bread crumbs... Any cooks use anything else besides bread crumbs to dredge the eggplant in? Seasoned flour?? This is so off topic, I know..I tried a google search and nothing.

    How funny! This is what I want today after days of nausea and not wanting to eat anything. I'm not making mine, though (I admire you!). I'm going out with DH to our favorite Italian restaurant for it tonight :-) Hope you enjoy yours!

  • You probably do not have this in the house but Matzo meal.  During Passover I make chicken with Matzo meal rather than bread crumbs and you can't tell the difference. 

    I think I have heard of people using Corn Flakes.

  • You can dip in egg and then flour. I'm Italian and this is how my family makes it. Comes out perfect!

  • Corn meal also makes a nice coating. I usually put pesto spread on the inside of the eggplant and use ricotta cheese for a filling, and breadcrumbs or corn meal for an outside coating. It tastes wonderful!
