I am looking for some new ideas.

What is your fav go-to recipe!

  • I've never cooked with edamame, but I use boiled edamame as a topper for my salads.


    After 4 years, 3 failed IUIs and 2 failed IVFs our surprise miracle is here!

    This!  I love cool edamame on salads, or thrown into stir fry/chicken lettuce wraps/pad thai/etc. 

    Mmmmm....   Now you made me want some edamame!

    I usually just microwave it, shell it, put some olive oil and sea salt on it and sometimes garlic salt and eat it as a snack.

    Thanks for reminding me I have some left in the freezer

  • My favourite edamame recipe:

    Salad:

    3 cups frozen edamame

    1 cup canned corn kernels, drained

    ? cup diced water chestnuts

    ? cup diced red bell pepper

    ? cup chopped green onions

    ? cup cilantro

     

    Boil edamame beans just until bright green (3 minutes).  Drain and rinse with cold water.  Place in serving bowl.

     

    In non-stick skilled sprayed with vegetable oil, saut? corn just until browned (5 minutes).  Add to edamame along with water chestnuts, bell pepper, green onions and cilantro.

     

    Dressing:

    2 Tbsp soy sauce

    1 ? Tbsp rice vinegar

    1 tbsp sesame oil (I don?t use this)

    1 tsp honey

    1 tsp crushed garlic

    ? tsp minced ginger

     

    Mix the dressing ingredients and pour over salad.  If you put it in the fridge for an hour before serving, it?s delicious.

    There is so much chopping and prep, but it's SO worth it!!
