Sunday Meal Planning

Alright ladies, share a wonderful recipe below and help everyone out on some ideas for dinner this week!

  • Here's an easy meal-for-two to help get more salmon in your diet... :)

    Ingredients
    • 1/4 Cup Maple Syrup
    • 1/4 Cup Balsamic Vinegar
    • 2 Cups Veggie Mix (baby carrots, broccoli florets, sliced zucchini)
    • 1 tbsp Olive Oil
    • Two 6-8oz salmon filets

     

    Instructions
    1. Preheat oven to 425?F
    2. Combine maple syrup and balsamic vinegar in small bowl
    3. Put veggie mix on one side of baking pan
    4. Drizzle olive oil over veggie mix
    5. Put salmon on other side of baking pan
    6. Brush salmon with syrup/vinegar mix
    7. Bake 15-20min

  • So far this week were having:  Mexican Meatloaf w/ rice, Fried Chicken (only because I seen a new recipe while watching Food Network over the weekend) and tonight we're having italian sausage and pepper sammies. 

    I'll have to ask DH what his recipe is for his Mexican Meatloaf and post it!

  • Oh the Sunday meal planning! We used to be such good friends...

    I have found it is pretty much pointless for me to do any meal planning right now. What sounds good Sunday night makes me want to throw up by Tuesday dinner time. I'm looking forward to being more organized with my dinners in the *hopefully* near future, but as of right now it's definitely not happening.

    YA!!  I want that one!  My hubs HAAAAAAAAAAAAAATES meatloaf, but maybe he just needs to try something new....  ;0)

  • I'll definitely join in this thread at the end of the summer.  For now, H is out of school, and has taken over all cooking.  The only thing I know we are having this week is pot pie.  Other than that, it's up to him :)

    I'll give it to you after I see how it turns out LOL  He's made this recipe up in his head so we shall see!
