Egg Replacer Fail

I tried using ground flaxseed 1 T + 3 T water for each egg for my cake mix. Taste is great but it breaks apart in crumbles :(

  • The ener-g egg replacer works better for me in baked goods than any other sub.  Althought it still isn't enough to get my meatloaf to stick...

  • We use Ener-G egg replacer in baked goods & it works really well. Here's what we use for meatloaf, you can give it a try & see if it works out for ya. I take ground turkey ( or 1/2 ground beef before we discovered a beef allergy), an onion, carrots, bell peppers & salt & pepper. First, I put the carrots in the food processor & shred them & then do the same with the onions & peppers. I mix the meat & salt & pepper in, form it & you're good to go! Since we're now using all turkey, I will also add some Ketchup in to the mix to give it a little more moisture. I think all the shredded veggies work as a binder & it turns out really great! Our entire family eats it that way, even my in-laws! DS also loves ketchup so I put some over the top as a glaze.

  • My sister swears by the following (she nannied for a little boy with a severe egg allergy and baked a wide variety of stuff using this substitute): for each egg the recipe calls for, you mix together 1 Tb oil, 1 Tb water, and a teaspoon of baking powder.

    I haven't tried it myself since despite Alex's egg allergy, he can handle eggs in baked goods, but she thought it worked really well.

  • I have used 3 tbsp unsweetened apple sauce plus 1 tsp baking powder.  Worked like a charm in Z's biscuits.
