An extremely random question about empanadas...

Does anyone have any tips/hints/recipes for good empanada crusts?  I'm making DH Nutella and banana empanadas in lieu of a b-day cake tomorrow night and I've only ever made homemade crust of any kind once.  Eek.

Also, if I make the crust tonight, does anyone know if I should roll it out and stack the rounds between wax paper tonight or wait to roll it until tomorrow (just leave it in a ball in the fridge till then)?

 

Thanks for any guidance!  I'm so worried they won't work and then we won't have any dessert!!

  • When we made these in the restaurant, we'd have our pastry chef prepare some pie dough for us, and just use that, since it was consistent and reliable, and easy to work with in large quantities.  That said, I think you could just use the pre-made pie crust from the store if you were concerned about it.  Pillsbury makes one that I've used before with good results.  It's in the refrigerated area by the cookie dough.

  • Goya sells empanada shells in the frozen foods section.  Don't let them defrost all the way or they are a mess to work with.

    Otherwise you can use pie dough.

    I'm hell bent on doing them homemade...a stubborn trait I no doubt inherited from my Oma!  :)

    However...these just became my backup.  I'll probably pick them up tonight when I go get bananas.  Just in case.

    I'll let y'all know how they turn out...and post instructions IF they're good.  Sorry...don't ship though.  I barely got them rolled out before the twinos woke up from their nap.   ;)

     

    I'm thinking though with Nutella...they have to be good.
