Freezing corn?

Someone on here posted a picture last summer of the bags of corn that they were going to freeze. There were piles of it!

My freezer will be moving to Ohio next month and one of the things I want to put into it is local corn. I need to know your process for freezing it.

I blanch several ears of corn in an enormous pot of boiling water for about 5-7 minutes, then put it in ice water immediately to cool.  Once it's cool, cut it off the cob and then measure it into freezer or food saver bags.  Seal and freeze.  Repeat until all of your corn is done!

Stupid question, but what do you use to take the corn off the cob? A regular knife or some cob-stripping gadget?

I always just use a knife because I don't do a ton.  There are tools that you can use, too.  Another handy thing is to put the cob in the hole of a bundt pan or angel food cake pan.  Then, as you cut all of the corn will go into the pan.

I love kitchen tricks. :-)

I don't know how much I am going to do. I dedicate pretty much a whole shelf of the freezer to blueberries every year because my kids can eat more than a cup each in a sitting. We're going to do some serious picking on Thursday.

And then I am going to look into 1/4 of a cow.
