Pockets have an opening that you stuff with inserts. AIO have the insert sewn in ( no stuffing required but you can't change the absorbency). AI2 generally have a snap in soaker (like an insert) and you can change the absorbency based on what soaker you choose.
ETA: moat have a waterproof material like PUL included so they dont require an additional cover.
Pockets have no added absorbency, you are responsible for all stuffing.

AI2s can look like fitteds with a hidden layer of PUL (or fleece). Most of these you change like pockets. There are also Flips and Grovias that lay inside the cover (or snap) and you only need to change the insert if it is wet and the cover if it gets soiled.

AI2s have a snap in soaker and have either a PUL outer or a hidden layer of PUL under a fabric outer, so you don't need a cover with them.
Some AIOs (like the discontinued BG sized 3.0s) have a pocket that you can stuff more absorbency into.
