Ok, I am definitely no a baker but want to make the lactation cookies. However, I only want to make like half the batch because otherwise I will eat all 6 dozen cookies. I know I will if they are laying around. So, can I freeze the cookie dough? I know this is dumb, but do I separate the cookies first on wax paper and then freeze, or can I just freeze it in one big ball? That is, if I can freeze the dough at all.

I would think you could. The easiest option in the long term would be to take a cookie dough scoop and make dough balls on wax or parchment paper, layer (w/paper in between layers) in a 9x13 pan or something like that and freeze the balls. Once frozen, you would want to put the dough in something more airtight like a rubbermaid container or ziplock bag, but that would allow you to just take out the number of cookies that you want to bake.
I don't usually bake them all at once either b/c I never have time to get more than about 2 cookie sheets through the oven before DS has had enough cookie baking, so I usually just put a lid on the bowl that the dough is in and shove it in the fridge. I just try to bake the whole batch over about 3 days. With a 1Tbl dough scoop, I don't get anywhere near 6doz cookies.
I don't have the recipe so I don't know exactly what is in it but there are two ways to freeze cookie dough.
Log - If it is supposed to make 6 doz cookies divide the dough into 6 parts. Make each into a log, wrap in plastic wrap, put into a freezer bag and freeze. If you want to bake some right away put them in the fridge for an hour or so to firm up. Slice off cookies and bake. They are nice and uniform this way. I do this with sugar cookies, chocolate chip, sometimes oatmeal.
scoops - portion out your cookies with a cookie scoop or two spoons, however you are going to do it. Put them on a cookie sheet lined with wax paper, parchment paper or freezer paper. Cover with plastic wrap or freezer paper and freeze. Once they are frozen you can just dump them into a freezer bag.
When I freeze things that need to be baked I like to write the temperature and cooking time on the bag or on a paper inside the bag if I want to reuse the bag later. That way if dh or someone else is baking them they know what to do though dh probably won't want your lactation cookies.
