Gluten-Free Recipes?

DH's cousin is pregnant and on bed rest. I'd like to fix a few meals for them, but she cannot have gluten. Please share your favorite recipes, gluten-free mamas! Thanks!

You could make her a casserole or lasagna in two batches - one for now and one to freeze for later. Gluten-free lasagna noodles are pretty easy to find. We froze these chicken enchiladas and they were great. Just check the ingredients to make sure the green enchilada sauce is gluten-free.
