Chicken recipes?

Let me start by saying that I am NOT a very good cook. I can do basics and I can learn with trial and error, but cooking is not my specialty. I can bake all day long, but that's not going to help me for a long time!

So... can you give me your healthy chicken recipes? Maybe some healthy marinades and tricks for baking chicken that doesn't come out like shoe leather? I make good fried chicken breasts, again, not going to help me!

Same thing for a turkey breast. I'm thinking I can make a bunch of chicken and turkey on Sundays and eat on it for lunch/dinner through the week so I am staying healthy and sticking to a GD diet.

  • We usually cook our chicken breasts on a George Foreman grill and they are juicy.  This is quick, easy clean-up, and we can use it year round.  We usually just season with some garlic salt and pepper or Lawry's Seasoning Salt.  There are also some really good jerk chicken marinades that turn out good when you bake the chicken.

  • I love Lawry's marinade.  We marinate overnight and then just throw the chicken in the oven at 350 degrees for 30 minutes.  It's always perfect.   I'm not sure if you have a gas stove or not.  I think electric stoves kill chicken (and most dishes).  You may just have to fiddle with the time and temp. 

    It's also the perfect time of year to grill out!  Chicken on the grill is the best.  Kroger also has these pre-marinated pork chops that are to die for that you can just throw on the grill for about 16 minutes.

  • 2T chili powder

    2tsp cinnamon

    2tsp cumin

    2tsp light brown sugar

    2tsp kosher salt (divided)

    1/2tsp pepper

    Heat the grill to high. Wisk spices (with 1tsp salt) together. Season top of chicken (with the spice mixture) then sprinkle bottom side with remaining tsp of salt. Drizzle with olive oil. Grill, rub side down, about 3 min on med-high heat (until lightly golden brown and crust has formed). Flip the chicken breasts then grill (closed lid) for about 6 min. Let chicken rest for 5 min before slicing.

    So.Freaking.Good!

    oops, I missed the part about the GD diet--so the bruschetta chicken probably isn't so great.

    What about getting a rotiserrie chicken and using it to make chicken salad?  I like doing that with grapes, walnuts, garlic, thyme, and a touch of light mayo (just enough to get the ingredients to kind of stick together). I usually eat my chicken salad open-faced on sandwich thins, but if that's too much in the carbs department, it's great to eat just  by itself, or as a lettuce wrap.

  • DH has been grilling a lot lately.  We marinate in 2 Tbsp worchestershire sauce and 1 Tbsp garlic powder.  Turns out quite yummy & tender.  We have cooked them that way on the George Foreman grill too.

    Today I'm making Salsa chicken in the crock pot.  6 frozen (5 oz) chicken breasts, 1 can of black beans (rinsed to cut down on sodium), 1 cup frozen corn, 2 cups salsa of your choosing.  Cook on high for 4 - 6 hours.  (you can leave out the corn if it is too many carbs for you)  Yummy and very, very easy!

  • DH has been making this one lately with bone in chicken breasts with skin.  We don't eat the skin but it gives the chicken more flavor and it's harder to overcook chicken this way.

     Marinade:

    1 Tbs Lemon Pepper

    1 Tbs Mexican Oregano

    1 Tbs lemon or lime juice

    1 tsp olive oil

    Salt to taste

    Marinade the chicken 2 hours to overnight.  Bake at 350 until the internal temperature reaches 165 (30 mins to 1 hour depending on the size of the breast).  Cover with an aluminum foil tent and let rest for 10 minutes.

    Tips:

    A good digital thermometer.  Here is the one I have.  You can set an alarm to go off when the meat reaches the desired temperature so you can just throw it in the oven and walk away.  (The probe goes into the thickest part of the breast near the bone.)

    Use the freshest spices you can get!  We have a new spice store in Rookwood Commons.   Their stuff is a little pricy but is very good.

    I usually make baked potatoes with this.  Just pitch them in the oven the same time as the chicken and all you have left to do is throw on a veggie.

    DH has been making a grilled chicken with Asiago parmesan dressing, a bit of garlic, season salt, and black pepper.  It's delicious. 

    He's not sure how much, but it's made by Kraft and you can find it in the salad dressing aisle.

    We also like a grilled shrimp recipe- frozen shrimp, thawed, put on skewers.  Dab a little olive oil with a brush on them so the seasoning sticks.  We usually use garlic powder, pepper, italian seasoning, sea salt, and onion powder.  He's also used i can't believe it's not butter spray instead of olive oil...  but the olive oil is a more 'natural' taste if that makes any sense.
