Watermelon. This stuff is going to taste like summer in a jar once winter rolls around again. So far this year I've done violet, dandelion and watermelon. I am going to try some herb jellies or syrups, too.

It's ridiculously easy. I think this took me 45 min start to finish including cutting up watermelon for the little scavenger people.
If you properly process it in a water bath, it lasts years. I am working on a jar of blueberry that I made in June of 2009.
For small batches like this, I just use my stock pot with a steamer basket. You can get a whole canning setup at Walmart for about $30-- pot, rack, jar lifter, lid lifter, etc.
There are 247,599 tutorials online, or you can use the gold standard and follow the Ball Blue Book.
