Multiples

I need some lunch ideas, please! (for ~1yo)

Right now I am rotating between quesadillas, grilled turkey and cheese, pita with hummus and turkey, pbj (occasionally), and veggie pizzas on english muffins. They always have some fruit or veggie in addition to this, but I need a few new ideas!

What are your LOs really liking right now?  FWIW, dinner is when they have pieces of chicken or turkey, lots of veggies, and our leftovers.

  • I think I reply with this to every food post... ; ) Our kids love the Annie's pastas.  They make natural and organic in several different varieties.  It's one of the only things that all of our kids will always eat!  I like that they're easy to keep in the pantry, too.  We just buy them at our local grocery store.

  • We do a lot of spinach and cheese omelets.  Everyone thinks it's gross, but I make bean sandwiches quite a bit.  Chopped fresh spinach, smashed black beans, and cheese on whole wheat bread. 

    I also make a ton of burgers on the weekends.  One thing from the protein category, one thing from the veggie category, food process to chop, add an egg and some breadcrumbs, cook away!

    ETA: oh yeah, and pasta.  I took a jar of Newman's Own, mixed it with pureed chicken and spinach and froze it into individual ice cubes.  Mine don't do spagetti yet (too gaggy!), but they love penne or rotini.  I boil enough pasta for a few meals and take out the sauce cubes as needed.

  • We've been playing around with fritters lately.  Now that we are over our food allergies/intolerances, I buy a whole wheat pancake batter and make it per the instructions on the box.  I add a couple of jars of pureed mixed veggie (baby food), some chopped up veggies, and some sort of protein (beans or meat), and maybe a handful of cheese.  I make them up like pancakes, and freeze them to thaw at meal time.  Right now I have a stock of whole wheat pancakes with mixed garden veggies, chopped broccoli, diced ham, and cheddar cheese.  I melt more cheese on top when I heat them up too.  These are great away from the house because they get a little bit of everything from them all in one package, and they aren't too messy to eat.

    I also make homemade mac and cheese, but add some pureed veggies to the sauce, and use the Garden Delights pasta.  I sneak some chopped up veggies in with this too.

  • I do a lot of the things that you mentioned and that PP's have suggested (ravioli, pastas, burgers etc.)  You can also do turkey meatballs and freeze those, they are very convenient.  I have also done sort of a tuna noodle casserole type thing where I just use plain tuna (the kind that is packed in water) and mix it with some whole wheat noodles (sometimes I also throw in peas).  I thought they might think it was gross but they loved it.  I also will do hard boiled eggs sometimes as another way to get some protein in them.  I know for a lot of us, we are always struggling to find new creative ideas for lunch, for some reason that's a tough meal to come up with stuff for I feel like!
