DS once again has awful diaper rash (after going weeks without it!). I'm pretty confident it's because he's had diarrhea that last two days (not every poop - but most of them). I also noticed once in awhile (maybe every few days) he'll have undigested good in his stool. It's always a veggie. There's never a ton - but like a few kernels of corn or peas. Is that normal? Also, any suggestions to help stop diarrhea? TIA!

Totally normal, esp corn and other things that have a skin or cellulose casing on it (i think it is cellulose). My LOs poop a ton of corn and also pieces of mandarin orange and I've even seen an ENTIRE blueberry or 2 in DD's poop, she loves blueberries & shovels them in.
Now for the diarrhea... you can try BRAT diet (bananas rice applesauce toast) and just binding food in general. GL!
You didn't ask but my fave diaper rash concoction is some desitin max strenght, some aquaphor, some mylanta and then add corn startch til it is a thick paste. works awesome at our house.
corn can't be digested so it will always come out whole. Solmetimes we will also have the beans from green beans in his poop. not sure about the diarrhea. give a bland diet?
As PPs said, corn, peas, green bean are indigestible, so it's normal to see them in stool. We made the mistake of letting DS eat a lot of peas and corn over the course a few days. His stool was full of the veggies and it was actually pretty painful for him.
As for the rash...DS was having diarrhea (for a few weeks) because of antibiotics. I started giving him some probiotics. That seemed to help a little with the diarrhea, which in turn helped with the rash...
