Anyone else sensitive to natural gums?

I can't have natural gums. If I eat something with say xanthan gum in it, I will be in the bathroom within 30 minutes, wishing for my own demise. It's bad.

Well, being gluten/wheat free, it's damn hard to make a good sandwhich bread or bake pretty much anything without using natural gums. I'm almost at my wits' end. For some things (like muffins or cakes) I will use thick fruit purees, fruit jams with pectin, or even powdered gelatin (although I haven't had a ton of success with gelatin yet...work in progress), but for things like bread, I'm at a loss. All I want is a freakin' dinner roll or some pizza dough. But because of the absence of gums, I can never get a sticky dough...they are always the consistency of thick muffin batter.

This also means I can never use any pre-packaged GF mixes from the store...I'm overwhelmed.

Anyone have experience going gum free?

Mar 18: FET #2 (natural cycle) = CP (beta 1: 54; beta 2: 0)
Apr 18: FET #3 (natural cycle) = cancelled due to missed ovulation
Apr 18: FET #3 (natural cycle) = BFP! Beta 1: 201  Beta 2: 585 Beta 3: 3254 Beta 4: 9715 U/S 19May - one bean measuring on track with a HB of 125!
