What's for dinner this week? I need ideas...

I'm tired of meatloaf and tacos.  When DD wakes from her nap we're going to the grocer's and I'm making a list.  I need ideas.  TIA

  • We have a pretty loose menu this week.

    Tonight - Parmesan Pork tenderloin, rosemary white beans, and zucchini

    Other things on the menu this week:

    spaghetti  w/ meat sauce & whatever veggies we get this week from our co-op

    enchiladas (made with carnitas & pot roast in the freezer)

  • When we went to the grocery store last Friday, they had pork chops and brisket on sale, so that's what we're having this week. 

    Some of my recent meals:chicken & rice, grilled chicken w/ quinoa and black beans, beefy tostadas, macaroni w/ ground beef and broccoli, chicken, beef or pulled pork taco salad, ribs...

  • Korean Short Rib Tacos with Pickled Radish and Pear

    Mexican Chicken Casserole

    Sliders with sweet potato fries

    Pork fried rice

    Tortilla crusted tilapia (ready to bake in the seafood section at HEB) with carrot souffle and rice

    Creamy Caprese Pasta

  • mahi mahi tacos w/ avocado salsa (i use this recipe but sub in mahi mahi in place of tuna)  ** edit - fixed the link

    parmesan-panko crusted chicken  (let me know if you want the recipe, it's from the 6 o' clo ck sc r a mble) with garlic green-beans

    tarragon turkey burgers 

    chicken tortilla soup (made it last week and liked it so much i'm making it again)

    spinach burritos (another recipe from the 6 o' clo ck sc r a mble)

  • I put our first few meals of the week in the crockpot this morning. Today it will be hot roast beef sandwiches, tomorrow I'll throw in some potatoes and carrots and call it stew:

     1 3-4 lb chunk of beef (cut really doesn't matter, I've used rump, chuck, shoulder, tip, whatever is on sale)

    1 bottle Guinness

    1 can condensed French Onion Soup

    Enough beef broth to cover

    Dump it all in the crock pot on low for 8 hours. I have never been able to get the beef to slice, but it makes a great gravy for dipping the sandwiches.

  • Chicken breasts marinated in Zesty Italian on the grill w/asparagus and some couscous

    Fam is coming in mid-week so I'll have to think of more stuff after they get here.

  • Tonight we are having mac and cheese with tuna and peas.  L is not eating the peas =(

    the rest of the week:  I bought steak, pizza, and pork chops.  I have some frozen ground beef that I might use too.

    As for how I will prepare them...I usually don't know until I get home and see what time it is.

    ETA:  I can't wait for school to end so I can fix some more interesting meals that take more than 25 minutes.

    Vindaloo chicken (I just get the simmer sauce at Costco and drop raw meat in to cook - really easy)

    Chicken stuffed with cream cheese and pesto

    Spaghetti squash with red sauce

    Chipotle Meatloaf

    Chicken and black bean tacos

    Raspberry chipotle pork chops
