When we went to the grocery store last Friday, they had pork chops and brisket on sale, so that's what we're having this week.
Some of my recent meals:chicken & rice, grilled chicken w/ quinoa and black beans, beefy tostadas, macaroni w/ ground beef and broccoli, chicken, beef or pulled pork taco salad, ribs...
I put our first few meals of the week in the crockpot this morning. Today it will be hot roast beef sandwiches, tomorrow I'll throw in some potatoes and carrots and call it stew:
1 3-4 lb chunk of beef (cut really doesn't matter, I've used rump, chuck, shoulder, tip, whatever is on sale)
1 bottle Guinness
1 can condensed French Onion Soup
Enough beef broth to cover
Dump it all in the crock pot on low for 8 hours. I have never been able to get the beef to slice, but it makes a great gravy for dipping the sandwiches.

Fam is coming in mid-week so I'll have to think of more stuff after they get here.
Tonight we are having mac and cheese with tuna and peas. L is not eating the peas =(
the rest of the week: I bought steak, pizza, and pork chops. I have some frozen ground beef that I might use too.
As for how I will prepare them...I usually don't know until I get home and see what time it is.
ETA: I can't wait for school to end so I can fix some more interesting meals that take more than 25 minutes.
