I'm in a dinner rut... need your fav dinner ideas please!

I'm sitting down trying to figure out dinners for the week and I'm bored with all the old usuals we do. What's on your dinner menu this week? Any favorites you can recommend? Thanks & Happy Monday!

  • We had awesome burgers last night. I got them at the meat counter but they are easy enough to do at home. Some had bacon and cheddar cheese cubes mixed into the meat and the others were mushroom and swiss.

We're grilling kabobs tomorrow. Tonight is beef stroganoff in the crock pot because it's my knit night.

  • The last few nights we have had

Taco Salad, Just all the taco fixings, over field greens.  I use a few crumbled chips instead of shells.

Honey Mustard pork loin with pear and Gorgonzola  salad.

Seafood Lasagne with homemade rosemary garlic french bread.

  • I love brushing some jerk sauce on tilapia or salmon and throwing it under the broiler.  YUM.  Goes great with brown rice & broccoli.

Also on our menu this week - chipotle-marinated pork (sauteed yellow squash & carrots on the side); turkey burgers w/salad and sweet potato fries; ham with fresh pineapple (green beans on the side).

  • Tonight we are having gorgonzola stuffed burgers with caramelized onions. tomorrow will be pasta of some kind.

  • Turkey Sundried Tomato & Spinach Meatballs in Tomato Basil Sauce

Recipe in my blog...my son loves them and they are healthy!  He actually asked me to make them again this week.

  • baked chicken:

dip chicken tenders in ranch dressing and then cover with bread crumbs. season with salt and pepper (paprika is an option too). bake for an hr -1 hr 15 min at 375.

even tho it takes a while to bake, the prep time is fast and the clean up is even faster - i put foil in the 9X13 pan and spray with cooking spray (no pan scrubbing later). it's yummy and the kids love it.

  • We had fish and chips last night. We will have tacos tonight. Also on the menu this week are BLTs, breakfast, and some sort of pasta chicken dish. We have a busy week, so we have those quick meals on our plan this week to feed the family.
