Egg Free Moms...

Just wondering what you found for alternatives to eggs?

I have the powdered stuff (ener-g). Sometimes its a pain to use it.

So I know people use applesauce instead of oil in pancakes... kinda like that idea.

For Muffins I find the powdered mixed without eggs that say "just add water"

Cake: Only have used ener-g but heard you can use 12 oz of a soft drink to replace everything that is called for.

Ideas??

  • How does the powdered stuff taste? I'm new to the egg free thing and I'm finding it difficult. I'm already thinking about needing to find an eggless recipe so she can have a good cake on her birthday.
    My allergist gave me a list of alternatives, let me dig it up.

  • I use fruit purees in a lot of baking - apple sauce, pumpkin, banana, or even baby food prune puree work well.

    You can also use a tablespoon of flax seeds beaten with 3 tablespoons of hot water--it will gel together like an egg.

    The key is to think about what the egg is doing in your recipe--leavening vs. binding, etc.  If there are more than 3 eggs in a batch, replacing usually doesn't work (e.g. Angel food cake).

    I've done this once or twice because I just don't feel confident about the ingredients of the ener-g.  Other than those few times, we've given up baking.  There is a great vegan bakery near us and if dd is having a party at school or special event I just run by there (they use organic applesauce).  They enable me to be lazy and we avoid a lot of sugar by not baking anymore.

  • It depends on its purpose in the recipe.  If it is to work as a binder, you can use dissolved powdered gelatin.  Most of the time in baking it is to help things rise, so you can use baking powder instead.

  • Just wondering what you found for alternatives to eggs? for baking i use the ener-g also. And it hasn't failed me yet. I use it in pancakes, cookies, cakes..  If you are not allergic soy than you can use tofu as scramble eggs.  I find the ener-g so easy to use.

    I'm not crazy about Ener-G egg replacer. I find that I have better results using a fruit puree, like banana or pumpkin (I can't use applesauce b/c I'm allergic to apples but I hear it works well), or even fruit jams because of the pectin they contain. I have tried using dissolved gelatin as well. to be honest, I have the most success with fruit jams.

    If the idea behind the egg in the recipe it to help rise, I agree with PP and suggest using baking powder.

  • We are relatively new to this egg free diet for DD but this blog has some really yummy recipes for egg free baking.  We have done the chocolate cupcakes, pancakes, and chocolate chip cookies and they all were very good.
