Healthy / Lean Crockpot Recipes?

I love using the crockpot but it seems like most of the recipes I come across are for ultra-fattening dishes.

Does anyone have any (at all!) crockpot ideas that are lean?

  • Salsa chicken comes to mind.  2 chicken breasts, a jar of salsa, cup of rice (I use brown) and usually a 1/2 of corn.  It all blends together nicely.  We put it on tortillas.

  • I do the salsa chicken too, but I add a block of cream cheese the last 2 hours. Guess that isn't so healthy! :)

     

    Right now I have in my crockpot garlic, onions, white beans, spinach, 2 c stock and 2 c water. Going to have a side soup with chicken salad sandwiches. 

  • Another my hubby loves is potato soup.  It is just water and chicken bullion with 4-6 cubed potatoes.  Stick in the crock pot all day and then hand mash and add cheese and a little cream before serving (maybe an hour before).  So good my hubbs swore they were boxed!!
  • Lemon chicken:

    4-5 lbs chicken (I use boneless, skinless breasts since it's all my family eats, but any chicken would work well)

    1-2 lemons (recipe calls for 1, I felt it wasn't tart enough so I use 2)

    a few sprigs of fresh rosemary

    paprika to sprinkle

    Line the crockpot with the chicken and juice the lemons over it. Place the rosemary on top and sprinkle with paprika to taste.

    Not sure how long it takes, my crockpot has a meat probe, so I set it to 180* then it automatically switches to warm when it's done. I serve with brown rice and salad.

    We do a lot of soups and chili.  Lots of those can be healthy.  I like this blog (though they are not all healthy ;)

  • I have the Cooking Light Crockpot cookbook and so far all the recipes have been awesome.  You can find them online too at cookinglight.com.

  • Tastykitchen has some great crock pot recipes.  Some are fattening, some not so much.

     Tonight we had this- https://tastykitchen.com/recipes/main-courses/beef-pepperoncini/  I hate beef but this is one of my top 10 meals!

     I also love the shrimp creole I found on there that you make in a crock pot. 

    I just go to the slow cooker section (or whatever I'm interested in) and change the sorting to rating so it will show the top rated recipes first.  Like I said, not all are healthy but there are a good bit of healthy AND delicious meals on that site- I use it daily
