I need some new ideas!   or a Chef?  :)

  • We are exhausted from vacation, so something easy. Peanut turkey burgers and sweet potato fries.

    Meatloaf! I found it in the William Sonoma Cookbook, its amazing! Sun dried tomatoes and pesto, yum!
  • (grilled) marinated chicken breasts, baked potatoes, and salad. BORING!
  • Paula Deen's Mac & Cheese is in the crock pot now.  DH is at work tonight and then going to Vegas tomorrow....so I'm planning on munching on that all weekend, yum!
  • Tacos. I am totally going to cook tonight. Mostly because if I make tacos tonight, we can have taco salads tomorrow and I can avoid cooking.

  • Grilled pork chops (or baked since it is now raining), mixed veggies and stuffing--I love stuffing even when it isn't Thanksgiving ;)

  • BLT's, pasta salad and carrot sticks...nothing too exciting

  • Thai marinated chicken (from Fix Freeze Feast freezer stash) and stuffed peppers (also from my freezer stash).
  • Our menu for the week:

    M: skinny taste chicken cordon bleu, asparagus & some yummy roasted red potatoes (I cut them into little wedges, tossed in a bit of leftover pesto and baked 'em up till they were all browned and crispy - they were so good - the chicken was so so, I didn't love it)

    T: grilled lamb kebabs (slightly adapted Ina Garten recipe, marinated in yogurt, rosemary, lemon juice and garlic, they were incredible!) couscous w/ pistachios & craisins, roasted broccoli and cauliflower

    W: morningstar veggie 'chicken' patties, sweet potato oven fries, salad from a bag

    T: picked up Subway

    F: taco friday (turkey taco meat, black beans, salsa & homemade guac)

    S: maple mustard pork chops, mashed sweet taters, green beans (the fancy skinny kind sauteed with lots of garlic, yum!)

    S: penne w/ spinach, chicken and tomato cream sauce, green salad

  • DH stayed home from work today, and came home early yesterday, so I've been lucky! He's a much better cook than me. Tonight, we're having fettuccine with sweet pepper cayenne sauce. We've never tried this recipe, but sounds pretty good! We love allrecipes.com.

    Ingredients

    • 12 ounces dry fettuccine pasta
    • 2 red bell peppers, julienned
    • 3 cloves garlic, minced
    • 3/4 teaspoon cayenne pepper
    • 1 cup reduced fat sour cream
    • 3/4 cup chicken broth
    • 3/4 cup grated Parmesan cheese
    • salt and pepper to taste

    Directions

    1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
    2. Meanwhile, spray cooking oil in a large skillet and saute red bell peppers, garlic and cayenne pepper over medium heat for 3 to 5 minutes.
    3. Stir in sour cream and broth; simmer uncovered for 5 minutes. Remove from heat and stir in cheese.
    4. Toss hot pasta with sauce and season with salt and pepper to taste; serve.

  • Tonight we had pulled pork (I use this recipe) and sweet potato fries.  Yum!

    Very spicy! DH even used less cayenne pepper than the recipe called for, and it was still pretty spicy.
