Turkey Feta Meatloaf
Mix turkey with 8 oz of Feta and about 8-10 sprigs of fresh thyme (not the same flavor if you use dried) a cup or so of bread crumbs a little salt and pepper. (if it's dry you can use an egg) Put it in the loaf pan and cook
Place a large pot over medium-high heat with the EVOO, 2 turns of the pan. Add the ground chicken and break it up, lightly browning it for 5 minutes.
Add the carrots, onion, celery, garlic, paprika and bay leaf and season with salt and pepper. Cook, stirring frequently, for about 7-8 minutes. Add the chicken stock and scrape up any brown bits on the bottom of the pot.
Add the hot sauce, tomato sauce and the stewed, fire-roasted or crushed tomatoes to the chili and bring up to a bubble. Simmer for 8-10 minutes more to let the flavors come together.
While the chili is simmering, pre-heat the broiler.
Spread the chips out on a cookie sheet. Top with the crumbled blue cheese and transfer to the oven to melt the cheese, 2-3 minutes. Remove from the oven and sprinkle with the chopped parsley.
Top each serving of Buffalo Chicken Chili with a few blue cheese chips.
This couldn't be easier. You know those Amy's Organic meals they sell in the freezer section? Buy 2 of the Mexican Casserole ones. Heat them up in the microwave while you brown the turkey with olive oil and gobs of chili powder. Mix everything together and serve. Makes a TON of food (enough for a super hungry DH, you, and leftovers for you for lunch) and literally takes 10 minutes.

I made meatloaf last week and don't have the hoison sauce of the lettuce wraps on hand. I'm obviously too lazy to grocery shop and love all of these ideas!
Well, the recipe for Meatloaf on the back of the Lipton's Onion Soup Mix box is REALLY good. I really don't like meatloaf, but I love this one!

I'm not a huge ground turkey fan, but it's leaner than beef, so I use it for meatballs. Mix a pound with about 1/2 c. breadcrumbs, a little bit of parm cheese and an egg. Roll into little meatballs and simmer with your favorite jar sauce. Takes about 20-30 minutes on the stove.
Otherwise, use it in anything you'd normally use beef for.
This turkey burger recipe is THE BEST EVER.So yummy. Only thing I change is to use the WHOLE eggplant, skin and all. The skin's where most of the nutrients are.
I use it as substitute for grund beef all the time. So, hamburgers, spaghetti meat sauce, tacos, stuffed peppers/cabbage, and chilli. That's all I can think of off the top of my head. Happy Cooking!

Brown it, drain it, and add some beef broth. Add about 2 cups of elbow macaroni and simmer until the mac is soft/al dente. Add salsa and Campbells cheese soup. Mix it all together and you have a YUMMY tex mex type meal.
Turkey burgers with BBQ sauce and blue cheese mixed in and avocado on the top. So tasty, especially because I can eat the blue cheese since it gets cooked with the burger! We also use ground turkey for pretty much anything that calls for ground beef, like lasagna (make it into roll-ups instead of one mass of lasagna, it cooks faster) and stroganoff.

Rachael Ray has a recipe for Buffalo Chicken Chili that uses ground chicken but I've always used ground turkey and we love it. Freezes well.
