How many blankets do you really need for baby? Is the quilt for actual use or just decoration to hang over the crib? I kinda think quilts are too stiff to be comfortable. My baby will be born around Christmas. What type and how many blankets do you recommend?

Receiving blankets are what you need the most of for swaddling, and because babies spit up alot or have diaper failures, you end up going through those the most. One or two quilts at most is plenty to lay on the ground for tummy time, and one or two of those plush blankets are nice to have if you want to put them over the car seat or stroller on the go, depending on weather.
My son uses his quilt now, but in the beginning, it's decoration.
I used about 3 chenille blankets to rotate as a car seat blanket. You don't want to overbundle baby in the straps (compression in an accident) so I always swore by the Carter's bear suit and a blanket over.
You'll also want about 4 receiving blankets for swaddling. What you pick for that is your choice though!
We had quite a few receiving blankets that we used for swaddling, traveling, covering the car seat in bad weather, playing on the floor at other people's houses, etc...They come in handy!
We also had 3-4 plush blankets that we used at home to put on the floor for playing/tummy time, to cover DD in the stroller and now she uses those blankets during nap time.
We have the quilt that came with her bedding set and I plan to use that on her toddler bed someday.
