Still learning here, but is the main reason why you would choose a pocket over an AIO is because:
1.) Pockets are easier to dry since the pieces come apart
2.) You can adjust the absorbency of pockets by adding or removing stuffing
Otherwise, why wouldn't you go with an AIO? Pockets seem messier in the beginning since you have to remove the stuffing.
I'm only using PFs and covers for now but would like to pick up some other kinds as well hence the questions.
What am I missing here on the differences between the two?

I think pockets are generally cheaper, too.
I don't find them to be messier either - most of the inserts shake right out so you aren't touching anymore than you do with an AIO.
And based on no facts, I feel that pockets get cleaner because the insert and shell are washed separately. I realize this probably makes no sense, but that's just my thinking!

Another reason I didn't go w/ AIOs is sizing. AIO generally are sized (small, med, large), and pockets are generally adjustable for multiple sizes.

That's pretty much it. Also, pockets tend to be one-size and aios tend to be sized, but that's not always the case.
It depends on a lot of factors (quality of the pocket to begin with, wash/dry routine, etc.). But DD was in a pocket yesterday that she's been wearing since at least last August, and it looks brand new.
all of my pockets are bg and i also have their organic aio [one-size]. what you said is true but i think it comes down to personal preference as well. i thought i would like pockets way more than AIOs [and it seems most people whose reviews i've read do] and i ended up hating them. i'm sure there are some pockets i would like better than the bg but i just don't like those at all.
i also don't like that they're made of a synthetic material. i only use my AIOs when we're out of the house but i find them very convenient and the drying time doesn't bother me. like i said, some people like one and some like the other so i think regardless of the pros/ cons, you just have to try them and find out which you end up liking better.
i have recently started to use wool covers and have been using my fitteds and prefolds so much more since then. i can't believe i waited so long to try wool because i like it so much more and it's much easier than i thought it would be.
