Hi ladies. I need some new yummy and easy-ish desert recipes. No coconut(I'm allergic) or cheesecake(even though I love it). Bored with all my recipes. Plus we've had cake 3 weekends in a row for all the recent birthdays.

Chocolate eclair cake:
line a cake pan with graham crackers
Filling: Mix 2 packages(3 oz) vanilla pudding mix + 3 c milk, fold in 1 tub cool whip
top w/ another layer of graham crackers
Pour melted/softened chocolate frosting on top
Trifle:
cut up pound cake, layer in vanilla pudding mixed w/ cool whip, add fresh berries
Chocolate Trifle:
Cut up chocolate cake/brownies, chocolate pudding, cool whip, top with heath bars
CHOCOLATE PB SQUARES
Yield: 24 squaresIngredients: 1/2 cup (1 stick) butter2 cups creamy peanut butter*
1 1/2 cups graham cracker crumbs
3 cups powdered (confectioner's) sugar
1/2 cup (1 stick) butter (in addition to butter listed above)
12 ounces (2 cups) semi-sweet chocolate chipsInstructions: 1. Melt 1/2 cup butter in medium saucepan over low heat. Remove from heat and stir in peanut butter, confectioner's sugar, and graham cracker crumbs. This will make a stiff "dough".2. Spread dough in a lightly greased 9x13-inch dish. Press down evenly.3. Melt remaining 1/2 cup butter over low heat. Add chocolate chips and keep heat very low. When chocolate is soft, stir gently. Continue heating until lumps are all melted. Stir, and then spread this mixture over the peanut butter layer.
4. Refrigerate for 30 minutes, then cut into squares. Store in the refrigerator.

INGREDIENTS:20 chocolate sandwich cookies, crushed*1 (8 oz) package cream cheese softened**2 cups confectioners' sugar3/4 cup peanut butter1 (12 oz) container frozen whipped topping, thawed
DIRECTIONS:Press crushed cookies into the bottom of a 9x13 pan, reserving a few for decoration.In a medium bowl, beat together the cream cheese and the confectioners' sugar.Stir in the peanut butter until well blended.Fold in the whipped topping.Spread over the crushed cookie base.Sprinkle with remaining cookie chuncks on topFreeze for 1-2 hoursThaw 10-15 minutes before serving.
I make this several times a year for get togethers b/c everyone loves it --- it is deeeeelish!

Here we go again...IVF 3 is underway!
Oreo Truffles...(or as my family calls them...my chocolate balls LOL)
-1 pkg oreo cookies
-1 bar cream cheese (room temp.)
-melting chocolate (whichever you prefer)
*crush oreos in food processor to a powder, add to mixer
*add in bar cream cheese (softened)
*mix until it forms a dough
*roll into balls (about 1-2" big)
*chill in the fridge while you melt chocolate
*melt chocolate, then dip the balls in chocolate LOL
(i vary it up for seasons: for christmas i dip them in white chocolate with crushed peppermint candies; for thanksgiving i dip them in milk chocolate; for easter i use vanilla oreos and dip in white chocolate) there's a lot you can do!!

one that i like to make is caramel apple salad, super easy!
Granny Smith apples cut up mixed with cool whip and then chop up snickers bars and mix it all together, its a big hit everywhere i bring it.
For a large group i usually use 8 granny smiths, 6 full size snickers and a large container of cool whip light.

**I made this yesterday for Easter. It was outstanding! I made my own frosting for the top using cocoa, vanilla, confect sugar, butter and milk. OMG it was outstanding!***
