Portable, no need for refrigeration, Jello shot recipe

For those that read my confession this evening and req'd the Jell-O shot recipe here you go. (Note: I refrigerated these to help them set up quick, but there's no need to refrigerate once they're set. The texture is totally like a Knox Blocks, if anyone remembers those.)

4 env Knox gelatin

3 boxes Jell-O (regular size, not the jumbo box) - whatever flavor you want

2 1/2 C boiling water or juice, if you want to make it a little more flavorful

1 1/2 C alcohol (rum or vodka works best, and if you want to speed the process, put in the freezer for a couple of hours to get it nice and cool)

Spray a 9x13 pan with cooking spray and wipe with paper towel. Mix boiling water or juice with the Jell-O and stir until Jell-O is dissolved. Pour all 4 packets of Knox gelatin over the cold alcohol and whisk for a minute. Add cold mixture to hot mixture and stir to combine. Dump entire mixture into the prepared pan and stick in the fridge for an hour or so. Enjoy!

(Seriously, I was surprised by the amount of gelatin in this recipe, but this way you don't need those little cups and they are completely portable because they won't melt.) The combo of flavors I used was pineapple and orange Jell-O, Bacardi coconut rum and pineapple/mango juice - but some of the other ladies suggested blue rasberry, wildberry, etc. - go nuts and make it your own!
