Pork tenderolion in a raspberry cipotle marinade. I haven't decided on veggies yet. We have all sorts of frozen vegetables. I have fresh squash, will def cook that but need something more kid friendly to go with it.
Since we had the turkey burgers last night, it's fettucini alfredo tonight. Or breakfast for dinner.
We will also be having quesadillas and homemade pizza this week, and j*w posted a really delish-looking lasagna dish, that I want to try, so I may ditch the fettucini altogether this week in favor of that.
We turned the baked beans into beanie-weenies, added cornbread and fried apples for a homemade version of the TV dinners I loved as a kid, lol. If you use this recipe I'd plan on tripling or quadrupling it though: we tripled it and it still really didn't make that much. Enough for two full meals, maybe. More if it was just a side dish, of course, but you can freeze the extras. I'd probably use a full pound of beans the next time, then quadruple all of the other ingredients. I used 3 big, extra thick slices of bacon and that was enough.
Since we aren't having ham on Easter, I'm making it today. Maybe with scalloped potatoes or mac and cheese? And some home made rolls and steamed asparagus. Its a comfort food kind of day.

Exactly this - same recipe and all! Too funny. It is my husband's favorite and you can do so much with it.
