Here's a link on how to make a checkered apple. I usually make it with an entire "cheek" of the apple, rather than just a small section. Since my lunches generally get served right away, I do not soak them in lemon water. If we're taking the lunch out, I soak the apple for a few minutes after it is cut.
HTH! It really is easy and my DD quite likes them. She even eats all of the little pieces of peel that are discarded.
