i never have one ready when someone asks, so here's one i made last night. i got the recipe off the back of some heb noodles. i had little hope for this other than it was super easy....then it turned out to be tasty!
this is how it was on the package, but i made changes....see notes at the end
spicy chicken noodles verde
1 pack of wide egg noodles (16 oz)
1 can green enchilada sauce (10 oz)
1/2 cup sour cream (reg, light or fat free)
2 cups chopped roma tomotes (about 3)
2 cups shredded jalapeno jack cheese (a bag)
2 cups chopped cooked chicken fajitas
cook pasta, drain it. put it back in your pot. add green sauce and sour cream, toss it. add tomato, cheese,chicken and toss. season with salt and pepper
my notes:
i used wheat angel hair. 8 oz of green enchilada sauce because it looked like too much. a little less cheese and the grocery store didn't havee the dang chicken fajita meat! so i used shredded, seasoned enchilada chicken meat. i heated it in the microwave first, then added it. i did let it sit in the pot until everything got warm and the cheese melted. i like warm tomatoes ![]()
it was not super pretty and did not look exciting, but it was suprisingly tasty! and of course, super duper easy!
