And if I have time, I might stop by Berry Hill and get a big container of their chicken tortilla soup for dinner one night, and make a salad to go with it. I luuuuurve their chicken tortilla soup.

I think I'm going to try and make WW Mexican Meatloaf tonight. I think I'll also try and make Giada's shrimp pasta that DH likes. Thank goodness I'll only have to cook for 4 nights this week as opposed to five. Friday we'll be at my parent's house so I think my dad's thinking about grilling up some stuff.
Meat and organic veggies for us. I'm on a five week detox so no grains or fruits, carbs, dairy, etc.
Salmon with carrots, chicken salad wraps in butter lettuce, tilapia with broccolini, lentil and veggie soup, chicken stuffed bell peppers and I'm not sure what else yet.
Spinach salad, every night. No joke, I crave it when it starts to get hot. Tonight it has ham, avocado, tomatoes, and strawberries with hazelnut vinegraitte. Tomorrow will have roast chicken, then steak, then smoked salmon, and another night of chicken. We rotate other topping and dressings depending on the mood- cheese (cheddar, feta, bleu), hard boiled eggs, grapes, walnuts, cucumbers, etc.
Crockpot chicken tacos with sauteed squash tonight, pot roast, lasagna and salad, maple roasted chicken with sweet potatoes and broccoli, and rainbow trout and salad.

We had eggs with mushrooms & zucchini tonight and some fingerling potatoes on the side, meatloaf w/asparagus and sweet potato fries as sides, KA's chicken tacos made into chicken taco salad, rotisserie chicken w/cauliflower and salad as sides. The meatloaf and chicken tacos will make leftovers, so we'll eat those for lunch and probably one other dinner.

BBQ Sauce: 1/c c. yellow onion, small dice 1 T garlic, minced 1 lb. hatch chiles, chopped (if they're roasted hatch chiles all the better!) 1/4 c. cider vinegar 1 bottle of Heinz chili sauce 1/4 c. fresh lime juice 4 T cilantro, chopped 1/4 c. corn syrup
In a small pot, heat a small bit of canola oil. Add the onion and saute over medium high heat for 3 minutes. Add the garlic and saute for an additional 2 minutes. Add the hatch peppers and saute for 5 more minutes. Add the lime juice and cider vinegar then reduce by half. Add the corn syrup and chili sauce and simmer for 20 minutes or until BBQ consistency is reached. Adjust seasoning with salt and pepper. Blend with immersion blender till mostly smooth or transfer to stand blender. The sauce should be slightly chunky. Add the cilantro and mix well. Refrigerate over night or for at least 6 hours.
Tacos: 8 tortillas 2 boneless, skinless chicken breasts 1 c. cabbage, chopped 1/4 c. cilantro, chopped 1/4 c. green onion, minced 1/2 tsp. garlic, minced 2 limes, one for juicing and one cut into wedges BBQ Sauce, as needed.
On a cutting board, add chopped cabbage, cilantro, green onion and the juice of one lime. Run a chefs knife through the ingredients to blend together. Set aside. Brush some of the BBQ sauce on the chicken and grill for about 4 minutes/side or until cooked through. Chop the chicken. Add the chicken to the tortillas. Add some of the BBQ sauce and slaw. Serve with a wedge of lime.
DH likes to add a bit of cheese to his, but I don't.

MrsFroggi's strognoff (but we sub ground turkey for beef)
Both will make at least a couple of nights worth of yummy food.
