What's the difference between a day bed and a toddler bed?
I'm getting a crib from inlaws, and the manufacturer told me it doesn't convert to a toddler bed, but it converts to a day bed. I thought a daybed was really high, like a regular bed but my SIL said she lowered the mattress almost all the way to the ground (like a toddler bed).

I am pretty sure that the daybed has 3 sides whereas the toddler bed just has the headboard and footboard.

The difference between toddler bed and daybed is simply a guard rail on the open side of the crib, to keep the toddler from falling out at night. The daybed is still low to the ground and uses a crib mattress unlike a daybed for adults - it's basically a crib with only three sides, and no guard rail for your toddler.
Our crib (Graco Lauren) was advertised by BRU as converting to both a toddler bed and daybed, and stated that a conversion kit is not necessary for the toddler bed. BEWARE - what this really means, as it turns out, is that the toddler bed and daybed are one and the same, because Graco doesn't make a toddler rail for this crib, so there's nothing to stop your kid from falling out of the daybed. I've already complained to both Graco and BRU about this false advertising, and neither one gives a flying you-know-what, because it's still listed on the website as a "4-in-1" crib, which it's not.
Your choices in this case are to buy a generic toddler rail from Walmart, BRU, etc. for about $50 and hope that it attaches properly to your crib, or to buy a whole new toddler bed when the time comes (also starting around $40-50 at Walmart). I say buy a whole new bed for the same money, because the toddler rail is built right into the frame and then you don't have to worry about attachment/entrapment hazards. Save your crib to use for your next baby as a crib, or to use as a daybed or headboard for a full bed frame later on. Hope this helps!
