Awesome one-pot recipe

Made this tonight & thought I'd share, super yummy.  I used the organic boneless skinless chicken thighs from trader's just one package, and three sweet sausages.  I made the little marinade for the chicken in the mini-cuisinart, and I did the whole thing in the pot that is actually my crockpot insert, because I have one that can go on the stovetop and in the oven, so thats a good idea if you don't have a pot that is oven-proof and big enough.

 I had some sangria with it (sipping my second glass now!) and it was heavenly.  makes a ton so there are good lunch leftovers, too.

ARROZ CON POLLO

 

3 garlic cloves. Minced

1-teaspoon salt

2 teaspoons Chile powder

1 teaspoon of cumin seeds

3 tablespoons of olive oil

1 chicken about 31/2 pounds cut up (I use 4 breasts)

1 cup chopped onions

1? cups of long grain rice

1 slice of ham 4 oz. Cut in strips

? pound of Italian Sweet Sausage saut?ed and cut into slices

4?-cup chicken broth

1 bay leaf

2 tablespoons dry sherry

2 tablespoons of pimentos cut in strips

 

Mash together the garlic, salt, Chile powder and cumin seeds. Add 1 tablespoon of olive oil blending into a paste.

Pat chicken dry remove skin. Rub seasoning paste on chicken. Marinate at least 30 minutes. Better overnight in frig.

Heat 1 tablespoon of oil add chicken and saut?ed until golden. Set aside.

Saut? onion in remaining oil then stir in rice, Saut? until rice is golden.

Return chicken to pot add, ham sausage, broth, bay leaf and sherry. Bring to simmer on top of stove. Cook 10 minutes. Arrange pimiento strips on top. Cover tightly place in oven 350 degrees for 45 minutes.  Remove from oven

Let rest for 10 minutes covered before serving.
