Tonight I'm making coconut chicken tenders and coconut shrimp
Last night I made a breading of parmesan cheese, flour, pepper and sage, breaded the tenders then slowly cooked them in some heated olive oil (burner on low/medium) for about 5 minutes per side... the coating was really nice, then I added some proscuitto to top it off and it was yummmy!
I made a roux after I took the tenders out of the pain using about 2 tbsp butter and about 1/2 cup cream or you could use broth too.
Don't worry about tomorrow. After all, today is the tomorrow that you worried about yesterday. Take each day as it comes...one at a time.

I was going to suggest something in the crock pot. That is always a good way to go IMO.
