I try to make things in advance but I don't always have time lol
While I have lost all of twin weight, there are 20 more lbs I want to lose from fertilty meds and first pregnancy. It just seems so hard to make too good food choices when I am grabbing something on the run or in between feedings.
What are your go to healthy snacks, breakfast and lunches that are easy?
I eat pretty decently but I need to cut back my carbs, those are my enemy and always put weight on me.
TIA!
Re: how do eat well when you barely have time to eat? lol
I know it is hard...I just really try my best and usually just an extra two minutes or so per meal can help make it healthier!
Snacks - I buy the Kraft 2% milk cheese sticks. They are easy to grab, travel with, and satisfying. I also buy Kashi TLC crackers and take a handful of those if I need something else.
Breakfast - I keep low sugar cereals around- but I also try to avoid the carbs when possible. I've found that scrambling two eggs really doesn't take that long. I also started to buy pre-sliced mushrooms. I'll dice a pepper really quickly, throw some mushrooms in a pan with that and some cooking spray. When they're soft, throw the eggs in, and do a veggie scramble. It's filling and takes less than 10 minutes.
Lunch- I buy the arnold sandwich thins, laughing cow cheese and deli meat like ham or turkey. I spread the laughing cow on the bread, add my meat, some dijon mustard and lots of lettuce. If I need a salty treat I have some Pop Chips. I love the cheddar ones!
Hope that helps!
I try to eat a bowl of Special K every morning or a fiber 1 bar. Not sure about carbs in cereal but they advertise you can loose a dress size so I'll take that.
I usually have a Vegetable soft tortilla with lunchmeat, lettuce and tomatoe for lunch sometimes if no tortilla just use lettuce as wrap. I found these can sit without getting soggy.
No ideas for you on healthy snacks as I am a chocolate freak I stopped eating it when I was pregnant and I sure am making up for it now LOL!
We'll make homemade pizza on Sunday nights with a whole wheat crust and there's usually enough left over to get me through the week for lunches. 45 seconds in the microwave and it's done.
I rarely stop to snack, but, when I do, it's usually a cheese stick. Those are low (if not zero) carb.
For breakfast, I keep a stockpile of homemade whole wheat pancakes in the freezer. We'll make a huge batch once a month or so. I'll toast them and put some PB on top.
I seriously eat the same thing every day, it's kind of pathetic
breakfast - 2 packets of quaker weight control oatmeal - 2 minutes in the microwave and it tastes good lukewarm too LOL
lunch - dole salad kits - I buy the asian kit, the southwest kit and the harvest kit and I eat one every day. It takes 2 minutes to make and I tend to eat it over the course of an hour if the kids are up, if they are sleeping I get to eat in peace
snacks - things I can eat with one hand. Bananas, apples, pears, grapes. I also keep fresh berries and plain yogurt in the house. When I get home from the grocery store I take 5 minutes to cut and clean the berries and put them in a tupperware. I throw the berries over yogurt, add organic honey and it's a great snack.
dinners are where we struggle because I have to feed my husband too, we eat a lot of takeout still. But we found takeout places that have healthy options - i.e. steamed chicken and vegetables with brown rice from a local Chinese place. We had a ton of soups we made as freezer meals so we ate that for a while. Some nights we just do turkey sandwiches or PB&J's and lots of nights turn into cereal for dinner. When we do cook we I stick to recipes from Cooking Light in their 20 minutes or less section. Husband cooks while I tend to the babies.
HTH!
