Pregnant after a Loss

Recipe / Ideas Question

So my dad has his birthday party this weekend, and there should be about 40 people there. Because my dad and stepmom think I'm an invalid and pregnancy has rendered me useless, they asked me to bring a veggie tray. Yawn. Sleep

Anyone have any ideas as to what I could do to make it a bit more interesting? An interesting dip? Different veggie ideas? Something that is better than the standard carrots, tomatos etc?

  • What about bringing a regular dip and then hummus?  I love roasted red pepper hummus and carrots.

  • The back of the knorr vegetable soup packet has a yummy spinach dip and a yummy hot spinach and artichoke dip, both of which I love with veggies

  • Could you do a bruschetta platter? Like, one tomato, one eggplant, and olive tapenade, an artichoke one? It kind of fits under "veggie plate"!

    Ooooh. Spinach dip is a nice idea! I also like the hummus idea too. Maybe I could do an assortment of dips, and then at least I wouldnt fall asleep while making it! :)

  • I don't know about recipes, but for presentation, my MIL likes to hollow out a red pepper, after cutting off the top maybe 1/4 and put the dip in it.  Just adds a pop of color to the tray.

    This is what I was going to say!! I get a pepper of each color( the flatter on the bottom the better) and use them as my dip bowls!!!

  • I make a dip with roasted red peppers (you can find them in jars in the Italian section of grocery stores) and smoked or regular sundried tomatoes.  Literally just blend them together, you can add olive oil if you want, or salt and pepper, or garlic, but it's so good it doesn't really need anything. And it's a pretty bright red color, so it looks nice on the table. I serve it with celery sticks and carrot chips. It's also really good on crackers.

    Long story: trying on our own + testing testing testing with 6 rounds of Clomid, more testing, injectables + TI, laparoscopy - one tube blocked, 2 IUIs with Follistim...BFNs.
    RPL testing all normal, Karyotyping normal

    Moving on to IVF.

    IVF #1 April 2012 = BFN, IVF #2 June 2012 = BFP. U/S 7/23 = saw heartbeat but measuring behind. Follow up U/S on 7/30 - no heartbeat. D&C 8/2. Trisomy 12. IVF #3 Oct 2012 = Chemical Pregnancy

    Phone consult with CCRM on 12/12/12 - ODWU 1/4/13 - both tubes clear(!) - AFC 24, AMH 3.2, FSH 9.6, LH 5.4, E2 25. DH has high frag rate but improved!
    IVF #4 March 2013 CCRM. EP protocol w/ Menopur, Gonal-F & Dexamethasone. ER 3/29 & IMSI, PICSI. 43R 13M 10F 6blasts bio'd. CCS testing reveals 3 normals!!!
    FET 5/31/13 of 1 4AA blast - thawed and expanded. 4dp5dt BFP.
    Beta 9dp5dt = 181, 11dp5dt = 427. 1st u/s showed a healthy heartbeat! EDD 2/16/14

    After 4 years of hoping and heartbreak, our sweet little bean was born on 2/19/14
    We are so in love with her.

  • You could make a veggie pizza.  It's basically raw veggies and ranch dressing type dip spread on pillsbury crescent roll dough, then cut in to little squares.  So good!  Let me know if you want the recipe.

  • I make a dill dip that's super tasty with veggies....fresh dill, mayo, sour cream,shallot and a little sprinkle of seasoned salt!
