Title pretty much says it all: if you're making a meatloaf how much ground beef do you use? One pound isn't going to make enough for a family, is it? Is two enough? Three?
I use 1.5- 2 for our family of 5. It's perfect and generally has enough leftovers for DH and I to have lunch the next day (the kids are in daycare/school).
Can everyone post their recipe? I have not had meatloaf since I was a kid and it was disgusting. Bland and dry. I want a great recipe with flavor please!

We actually had meatloaf last night using the recipes below (a Bumpie from another boards blog). I did the meatloaf muffins opposed to an entire loaf and it was perfect! Really juicy and delicious. The only difference for me was the topping. She uses just ketchup and I mixed in a little brown sugar, pepper, and garlic powder to give it a little more umph. I put the topping on with 20 minutes left of cooking time, not from the get go. Hope this helps.

Apparently we don't eat much at my house. Then again, it's only 3.5 of us eating it. I only make a pound and we have leftovers.
