My favorite way is very southern. I chop an onion and put a large dollop of butter in a sauce pan and the onion and whatever herbs I feel like using, Italian works well. Stir that for a couple min on medium (so the onions are getting soft) then add sliced squash or zucchini or both and stir for a couple min. Add water 'till a touch over 1/2 of the squash is covered and cook on a high simmer 'till a bunch of the water has cooked off and the squash is really soft, stewwed.
I usually add several tablespoons of butter before serving. Another yummy thing you can add is Velveeta. I LOVE it like this but it is really southern being cooked down so much ;-)
It's also really yummy sauteed with onions in a skillet.

This is how my Grandma made it - I love stewed squash and onions (although she never added Velveeta).
I also love it in a foil pouch on the grill. If you are using a gas grill, there is no difference in just putting it in the oven on broil.
Usually with other veggies. Saute an onion and bell pepper and garlic in olive oil till soft, add zucchini/squash, mushrooms, and whatever else, salt and pepper, then I add some balsamic dressing (not just vinegar, unless you want to doctor it up yourself). Comes out fantastic.
