My kids love it too. Especially now that my oldest gets to help with cooking the eggs. My youngest isn't as fond of it since she doesn't like eggs and sometimes won't eat pancakes either. We had breakfast for dinner last week one day too lol. That day we did strawberries in the pancakes with more on top with a little whip cream.
Chicken curry, basmati rice and peas. DD ate the peas, some rice, and turkey lunchmeat. She is on a serious hunger strike and it's getting old quickly.
I sauteed a few chicken breasts - I had mine on salad with a sweet potato, DH had his in a wrap with cheese and bbq sauce. DD had chicken nuggets and berries...I'm jealous of all you with LOs that eat "real" food! Mine pretty much sticks with nuggets and pbj sandwiches for her meal staples.

I made navy bean bacon chowder in the crock pot yesterday, so we had leftovers. Also, fresh pears and mixed veggies. Well, I pretended to eat it and ate a huge bowl of cereal after I put the kiddo down.

Pasta with steak and spinach in a red sauce. We had leftover steak, so we made a sauce of marinara, red wine, onion, carrot, garlic, beef broth and tossed it with rigatoni, cooked spinach and the meat. DS had pasta, spinach and tomatoes topped with some parmesan cheese.

Bbq chicken sandwiches (made with rotisserie chicken), coleslaw, and sweet potato fries.
E had plain chicken, sweet potato fries, toast, and apple slices.
