AW my creative lunch idea

My son is currently having the following for lunch:

Homemade beet/broccoli waffle with melted taco cheese on top

He is LOVING it! Also, it was super easy and quick. I'm giving myself a big thumbs up today. PS - It also includes several food groups.

PPS - Yes, he is eating lunch at 1:30, because he naps from 11-1:30 (or so).
